When the dough swells significantly and there are a lot of honeycombs, it is proved that the dough has been fermented well, so the fermented dough is the old fermented noodles.
Cooked Bun Fermentation
To use the cooked bun fermentation method, you need to prepare 3 steamed buns with old leavened dough in advance, and then break these buns into small pieces for spare.
At the same time, prepare a basin, add the required flour to it, and add warm water to mix it into cotton wool, and then add the prepared buns into the flour, and knead it, knead the flour into a dough and then cover it with a clean towel (in winter, it's best to cover it with plastic wrap).
Place the dough in a place where the temperature is above 30 degrees Celsius for fermentation, and let it ferment until it is twice as big as the original size, then the old leavened noodles are ready.
