Because of its fine production and unique flavor, it is loved by the masses, hence the name "Couple Lung Tablets". After the establishment of the store, the materials are more exquisite, and the meat, heart, tongue, belly, head and skin are used to replace the original single lung, and the quality is improved. Although this dish is a snack, it has long been included in the list of famous dishes because of its fine cooking, fine ingredients and delicious taste.

1 "Husband and wife lung slices (Sichuan cuisine)

Beef, beef offal (tripe, heart tongue, dry tripe, scalp), salt-fried peanuts, brine, soy sauce, sesame powder, pepper powder, monosodium glutamate, star anise, pepper, cinnamon, Sichuan salt, white wine Chili oil.

1, clean the fresh beef and beef offal, and cut the beef into 500g pieces;

2. Boil beef and beef offal in a boiling water pot until the blood is clean, fish them out, put them in another pot, add old bittern, spices (including pepper, cinnamon and star anise), Sichuan salt and white wine, add clean water, boil them with high fire for about 30 minutes, then cook them with low fire for 90 minutes, until the beef offal is cooked but not rotten, take them out first, and let them cool for later use;

3. Boil the brine with high fire for about 10 minutes, then put monosodium glutamate, Chili oil, soy sauce, pepper powder and brine into a bowl to make juice;

4. Beat the cooked peanuts for later use, then cut the air-cooled beef and beef offal into slices about 6 cm long and 3 cm wide, mix them together, pour the flavor juice and mix well, divide them into several plates, and sprinkle sesame powder and peanut powder respectively.

2 "Husband and wife lung slices"

More than 50 years ago, Guo Chaohua and Zhang Tianzheng were husband and wife, who were engaged in manufacturing and selling spicy beef lung slices. They went from selling baskets, setting up stalls to recruiting customers to setting up stores. The lung slices they sell are actually scalps, hearts, tongues, tripes and beef, and they don't use lungs. Pay attention to the selection of materials, elaborate production and exquisite seasoning, which are deeply loved by the masses. In order to distinguish it from other lung slices, it is called "husband and wife lung slices". The husband and wife lung slices are large and thin, glutinous and tasty, spicy and delicious, tender and slag-melting.

"Husband and wife lung slices" is a well-known famous dish in Chengdu. Ingredients:

Fresh beef, beef offal (belly, heart, tongue, scalp, etc.), old brine each 2500g, chili oil, crispy peanuts, soy sauce each150g, sesame noodles100g, pepper noodles 25g, star anise 4g, monosodium glutamate, pepper and cinnamon 5g, and refined salt/00g.

Practice:

1, wash beef and beef offal. Cut the beef into chunks weighing about 500g, put them into the pot together with the beef offal, add water (based on the degree of flooded beef), boil with high fire, and skim off the floating foam continuously until the meat is white red, decant the soup, and put the beef and beef offal into the pot, pour the old brine, and put the spice bag (wrap the pepper, cinnamon and star anise with cloth), white wine and refined salt.

2. Bring the marinade to a boil with high fire. After about 10 minutes, take a bowl, scoop in 250g of brine, and add monosodium glutamate, Chili oil, soy sauce and pepper noodles to make a flavored juice.

3. Cut the cooled beef and beef offal into pieces 4 cm long, 2 cm wide and 0.2 cm thick respectively, mix them together, pour in marinade and mix well, divide them into several plates, and sprinkle with crispy peanuts and sesame noodles.

3 "Husband and wife lung slices"

Materials:

Beef100g, ox tongue100g, ox scalp100g, ox heart150g, tripe 200g, spices (star anise, rhizoma anemarrhenae, anise, fennel, tsaoko, cinnamon, clove, ginger.

Method:

1. Cut beef into pieces, rinse it with beef offal (beef tongue, beef heart, beef scalp, beef tripe), marinate it with spices, salt, pepper noodles and other seasonings, first boil it with strong fire, then switch to low fire, marinate it until the meat is crispy but not rotten, then take it out and cool it, and cut it into large slices for later use.

2. Wash celery and cut it into 1 cm long sections. Stir-fried sesame seeds and cooked flowers are pressed together into powder for later use.

3. Put the chopped beef and beef offal into the dish, then add marinade, soybean oil, monosodium glutamate, pepper noodles, red pepper, sesame seeds, peanut powder and celery, and mix well.

4 "Husband and wife lung slices"

Guo Chaohua, the founder, and his wife were pushing carts to sell cold beef slices along the street. Because of their good preparation and delicious taste, they were praised as "half the way to the car, a street with fragrant meat". There is no lung in the husband and wife lung slices, but beef, beef tongue, beef heart and beef scalp, which are cut into very thin slices and mixed together. People call them "Hui slices". It is said that it is a good thing for students to write a sign on the car with cardboard and write "Hui" as "Lung", so "Husband and wife lung tablets" gradually became famous. Its characteristics are: the meat is carefully selected, the spices are finely mixed, the thickness is uniform, and it is stirred into the taste.
