Origin
There are two accounts of its origin. The first theory suggests that the Shaoxing wine with rice is called Huadiao. It is made from high-quality glutinous rice, good wine quarts and spring water from Jiangsu and Zhejiang, brewed according to ancient methods and then cellared for several years, and its quality is better than that of general Shaoxing wine. It is also traditionally mixed with new wine as it is often only a third of its original volume when it is picked up from the cellar.
Another theory suggests that it was an old custom in Shaoxing, Zhejiang province, China, to store good wine in colorful wine jars as gifts for newborns, which were usually decorated with beautifully painted designs, hence the name huadiao (花雕), and that it later became famous throughout China and abroad as a fine glutinous rice wine
Huadiao is also known as Scholar's Red and Daughter's Red. Once upon a time, every Shaoxing family would bury a jar of Huadiao wine in the ground after giving birth to a baby. If the baby was a boy, they hoped that he would grow up to be well educated and go to the capital to take the exams, and then one day when he returned home to report on his success, he would open the old wine to greet his friends and relatives. However, the actual "Scholar's Red" is usually used to entertain guests when the son gets married.
The Legend of Daughter's Red
The legend says that a long time ago, there was a man in Dongguan, Shaoxing, who wanted to have an heir, but his wife was infertile for a long time, so he searched all over the world and finally got a prescription, and his wife became pregnant, and the man, who was so happy, brewed more than 20 bottles of yellow wine to celebrate. The winter and spring to October, the member of the outside wife gave birth to a thousand gold, will welcome the full moon in a few days, according to local custom, the member of the outside set shaved his head wine feast guests. After the banquet was over, the staff saw several altars of good wine has not yet opened the seal, it would be a pity to abandon, so the wine will be buried in the garden under the osmanthus tree.
Time flies like an arrow, the years go by like a shuttle, 18 years passes in a flash, the member of the foreigner's daughter has grown up, her appearance is gorgeous, can be described as a fish and geese, the country is beautiful. The woman's face is so beautiful that it can be described as a fish and wild goose, a beautiful country. The fair lady and the gentleman's son, the matchmaking people will be inundated with people, his father thought carefully, and promised to marry in the benefactor's son.
Soon, the big day that is to come, the feast, the old man and guests to celebrate the drink, the wine gradually exhausted still not happy, the old man worried about the occasion suddenly remembered that under the osmanthus tree and that has been buried for 18 years of good wine, that is, ordering people to dig the old brew to feast guests, to be wine altar out of the ground placed in the banquet hall, go to the head of the mud, and then the aroma of the pouncing, soak the heart and the spleen, the people competed to taste and drink, all of them are the color of the crystalline beauty of the color, the sweet cleaner and refreshing the taste of the Down, the seat of the tart couldn't help but praise: "buried daughter red, the cabinet out of the immortal child", the guests said good!
