Production step
1. Preparation
Slaughter the old hen, unhairing, eviscerating, cleaning and cutting into blocks for later use. Slice ginger and cut onion. Set aside.
2. Boiled chicken
Put the chicken pieces into the pot, add appropriate amount of water, add ginger slices, onion segments and cooking wine, boil over high fire and turn to low fire for about 20 minutes, then take out the chicken pieces for later use.
Step 3 stir-fry ingredients
