1. Remove the yellow leaves from the roots and outside of spinach, put them in a basin, soak them in clear water, wash them several times, drain the water and cut them into sections;
2. Knock the eggs into the bowl, add a little to break them up, pour 15g peanut oil into the pot, pour the egg liquid into the pot and fry until it is solidified, then turn off the fire and put it into the bowl for later use.
3. Pour the remaining oil into the pot, add chopped green onion and ginger slices and stir-fry until fragrant, then add spinach and stir-fry until soft;
4, pour in the egg pieces and stir fry evenly, pour in soy sauce, sprinkle with salt and stir fry to taste.
