Ingredients: 2 eggplants, 200 grams of minced pork, 2 garlic seeds, 1/2 pickled red pepper, 1 green onion

Seasoning: 1 tsp chicken powder , 1 tsp soy sauce, 1 tsp sesame oil, 1 tsp sugar, 2 tbsp salad oil, a little salt, a little pepper, 100cc water

Home-made recipe for authentic fish-flavored eggplant:

1. Wash the eggplant, cut off part of the stem first, then cut it into segments, dry it and set aside.

2. Mix the above seasonings together.

3. Boil the pan and put down the oil. When the oil temperature is about 170°C, add the dried eggplants and fry them until soft. Remove and filter the oil and set aside.

4. Cut the red pepper, garlic and green onions into slices and set aside.

5. Take a pan, pour an appropriate amount of salad oil, saute the minced pork until fragrant, then add all the ingredients in step 4 and stir-fry until fragrant.

6. Then add all the seasonings to the pot and simmer together. Finally, add the fried eggplant and cook over medium heat for about 3 minutes.
