How to braise dried fish with bacon
1. Wash the green and red peppers and onions and set aside.
2. Set aside the salted vegetables.
3. Dried fish for later use.
4. Wash the bacon, cut into thin slices, drain and set aside.
5. Soak the dried fish in warm water, wash and cut into sections.
6. Cut the salted vegetables into small pieces and soak them in water to remove some of the salty taste.
7. Slice ginger and garlic, cut green onion into flowers, cut green and red pepper into rings and set aside.
8. Put a little oil in the pot, add bacon and stir-fry until the oil is released.
9. Add ginger and garlic slices and saute until fragrant.
10. Add dried fish, add cooking wine and stir-fry.
11. Fry until the dried fish absorbs the oil and softens.
12. Add dried chili peppers and Sichuan peppercorns to bring out the aroma.
13. Add the soaked salted vegetables and stir-fry.
14. Add appropriate amount of water, cover and cook over medium heat for about 10 minutes until the soup becomes less.
15. Add green and red pepper and stir-fry evenly.
16. Add chicken powder, oyster sauce to reduce the juice, sprinkle with chopped green onion, stir well and serve.
