The glutinous rice will be steamed with some alkaline water, so that the steamed glutinous rice looks better and is a little yellow. When glutinous rice is beaten into a rice cake, it will be put in a basin with a hammer, and the rice cake and glutinous rice straw will be scraped off with a hammer. Then take a prepared sauce in your hand. Put a small amount of homemade Chili sauce, salt, sugar, sesame powder, yellow wine, soy sauce and fresh (oil-consuming, light soy sauce) into a bowl, add a small amount of boiling water and stir well. Wash and soak the red beans for two hours, add a few slices of ginger, boil and simmer until the beans are soft, add appropriate amount of sugar for later use, scald a part of glutinous rice flour with boiling water, slowly add dry powder and knead evenly, add some cold water appropriately, fully knead in place, put in a pot, mix the two kinds of rice flour, add warm water, knead into dough, rub into strips or flat with oil on your hands, boil the water in the pot and steam for about 20 minutes. You can wrap it in plastic wrap and refrigerate it in the refrigerator. The cold glutinous rice you buy should be soaked in water for 3-5 days. Finally, it should be washed together. This panning work can't be sloppy, it can be cleaned repeatedly. The rice cake made in this way is white and free of impurities.
