Homemade Custard Filling Directions
Eggs, egg yolks beaten. Add sugar, a pinch of salt, milk and mix well with a hand whisk. Melt the sugar thoroughly.
Weigh the milk powder and flour and put them into a separate container. Sift it little by little and add it to the whisked custard.
Add the sifted flour and milk powder in small portions, and use a hand whisk to mix the flour and custard very slowly, starting from one side. Make sure you don't go too fast or too wide, as the flour tends to clump together.
Till all the flour and milk powder are added. Mix well to get a good look.
Sit in a pot, add boiling water to the pot, put the well-mixed custard batter in the pot over water to heat up. Add the weighed butter.
Heat over medium heat, stirring constantly with a spatula. Once the butter is thoroughly melted, slowly the custard starts to solidify. Now you can see the solidified custard on the spatula. Boil less water in the pot to not intermittent water. The pot is very hot. Be careful of burning your hands.
The water steamed into this almost can be used to make milk yellow package. I do mooncakes, need to be steamed dry some.
Steam for about half an hour. The last look. Taste it, it's creamy. After cooling, put it in the refrigerator to chill, and it will also become a little harder for mooncakes.
