Pancake fruit, generally referred to as pancake_zi, is a famous snack in Tianjin, China, where it is used as an early breakfast. Pancake_zi consists of a thin pancake with mung bean flour, egg, and _zi (doughnut) or _grates_, with noodle sauce, minced green onion, fermented bean curd, and chili sauce (optional) as condiments.

In June 2017, the art of making pancake _zi was selected as one of the fourth batch of municipal intangible cultural heritage in Tianjin.

In March 2018, the Tianjin Catering Industry Association established the Pancake_Son Branch.

Pancake_zi is a snack for Tianjin people. It consists of mung bean flour pancakes, eggs, and fritters or thin and crispy "_ grate", with noodle sauce, minced green onions, curd, chili sauce (optional) as condiments, savory taste, today's pancake _ sub raw materials are not only limited to mung bean flour spread into thin pancakes, as well as soybean flour, black bean flour, and so on a variety of choices. However, Tianjin people still adhere to the traditional way of eating, authentic pancake fruit in the choice of ingredients only cornmeal, oil sticks, as well as green onions and other condiments.
