1 Alkali hair (old style hair method, not recommended). Bird's nest with warm water, and then rinse with clean water two or three times (pay attention to keep the form neat), and then soak into the cool water; pour away the water before use, use alkali noodles and bird's nest, generally 50 grams of bird's nest with alkali noodles 1.5 grams (bird's nest, such as the old, can be used for 2.5 grams), plus boiled water to mention a little bit; to the bird's nest up, pour away half of the alkali water, and then use boiled water to mention three or four times to the expansion of the original product of three times the hand-twisting sense of softness and astringency, a pinch will be cut off! That is; then rinse off the alkaline surface, soak into the cool water to be used. Into the cooking with a dry cloth to absorb the water can be.
2 evaporation. Also known as on the cage, steamer. Is a means of cooking raw materials preliminary cooked processing, but not as a method of cooking into dishes. After the preliminary processing of the net material with steam steaming, to break the degree of raw, semi-cooked or just cooked, for the finished dish cooking to reduce time. First, soak the bird's nest in 50℃ water, until the water cools down, then soak it in 70℃ water, until it swells up and then take it out, protect it from breaking, change the water and rinse it twice, put it into 80℃ water and scald it, clean it and load it into a bowl, steam it over a low fire until it becomes loose and soft and sticky.
3 soaking hair/water hair. Also known as dip hair, hair material. Water as a solvent to help hair, the dry ingredients will be immersed until puffed, fluffy, tender for formal cooking. Dry ingredients re-inhaled water, can maximize the original tender, fluffy state.
Water hair according to the temperature of the water can be divided:
1, boiling water hair: this is one of the fastest method, but the loss of nutrients is the greatest, this method we do not recommend using. Take the right amount of boiling water, put the dry bird's nest into the boiling water with a lid to keep warm and soak until the bird's nest is completely soaked. If the bird's nest is less than 40 grams, the ratio of the bird's nest to water is 1:40.
2. Hot water soaking: This method is recommended for emergency use only, put the whole bird's nest into the appropriate amount of hot water at 60-80 degrees Celsius with a cover to keep warm and soak it until the bird's nest is completely soaked, normally the soaking time for White Bird's Nest is 0.5-1 hour, and Blood Bird's Nest is 1-2 hours. The ratio of bird's nest to water is the same as above.
3. Warm water soaking: Put the whole bird's nest into the appropriate amount of 40-50 degrees warm water with a lid and soak it for 3 hours for White Bird's Nest and 6-8 hours for Blood Bird's Nest. During the soaking period, the warm water should be changed for 2-3 times, to make sure that the soaking temperature of the whole process stays at 40-50 degrees as much as possible. The ratio of bird's nest to water is 1:30. After the bird's nest has been soaked in this way, it only needs to be stewed for 15 minutes.
4. Cold water hair: Take an appropriate amount of room temperature pure water, put the bird's nest into the water and soak for 2-3 hours. This method is recommended to retain the most nutrients. The ratio of bird's nest to water is 1:30. Simmer for 30 minutes.
