Zhenjiang's "Gangmian" noodles, also known as Pot Noodles, are a household name in Zhenjiang. The practice is simple: knead the flour and roll it into thin slices, then cut it with a knife, cook it in the pot with the pot cover, and then put it into a bowl with seasonings. The characteristics of Gangmian are that it is soft and hard, and the flexibility of the noodles is good, which is suitable for both young and old. The noodles were not originally from Zhenjiang, and it was only after some twists and turns that the name was settled in Zhenjiang.
Legend has it that once upon a time there was a family in Shandong province with only a husband and wife. The husband and wife were very close, but the husband was always sick and had a poor appetite. Wife devoted to care, but under the noodle husband is either too hard, is called rotten, always eat very little. The wife was very anxious to find a way to make her husband's appetite grow.
One day, she used thick bamboo gabions to form rows, connected by a rope, and then pressed with a thick bamboo bar on top of the "jump" noodles. The noodles were flattened, stacked up and then "jumped" until the noodles were "jumped" as thin as paper, and then cut very thin. Then, the wife of the noodles into the pot, went out to carry cold water, back late, the noodle soup overflowed, she hastily lifted the lid of the pot, the soup cans of water to the pot, accidentally, the lid of the soup cans into the pot. When the noodles were ready, the husband tasted them, they were both refreshing and flavorful, he finished the noodles in three or two bites and said to his wife, "How did you make these noodles so delicious today, I want to eat them again." The wife said, "Today the soup can lid rolled into the pot, the noodle pot cooking pot lid." The husband said, "You give me another bowl of noodle pots with pot lids cooked in them." The wife saw her husband's appetite, and then put the lid of the soup can in the pot and cooked it on the noodles for her husband to eat. After that, the wife cooked the noodles in the pot every day for her husband to eat, and after a month, her husband's illness was eradicated.
When her husband got well, he went to Jiangnan to visit his friends. The wife missed her husband so much that she rushed to Jiangnan to look for him. In Zhenjiang, she had to rely on her noodle-boiling skills to a noodle store as a fellow, slowly looking for her husband. The wife also thought: my pot noodle is very special, my husband will not forget it, and one day when he comes here to eat pot noodle, he will find me. Therefore, she made the pot noodles very authentic every day, attracting a large number of diners, so that the small store, which had been doing little business, flourished all of a sudden.
Originally, her husband had not been able to visit his friends in Jiangnan, and was also stranded in Zhenjiang, trapped in a broken temple. One day, he heard someone say that a noodle store on the street ran a specialty noodle business. Remembering that at home, he could eat his wife's pot noodles every day, but now he was so down and out, he missed her very much. He also rushed to that noodle store to eat noodles, and as soon as the noodles were in his mouth, he felt his wife's superb craftsmanship. When he ate more, he was even more convinced that the noodles were cooked by his wife. He went straight into the kitchen and saw that the one who cooked the noodles was the wife he had been longing for. The two of them were naturally very happy to meet each other. They thought that since Zhenjiang people love to eat so much "pot noodle", they might as well open a noodle store, not back home in Shandong. In this way, the "Zhenjiang Gang Noodle Shop" opened, "Gang Noodle" has become a famous food in Zhenjiang has been passed down from generation to generation.
