Dried fish:
Viscerate the live fish and rinse it repeatedly in clean water. Fish suitable for dried fish usually have thin meat, or use small fish. If the fish is thick, you can cut a few knives in the thick meat to allow sunlight and wind to enter and speed up the air drying.
Arrange the prepared fish neatly, and then sprinkle edible salt on the fish. When sprinkling salt evenly, don't miss every fish. Put the salted fish in a salting pond and stack them layer by layer until they are 10 cm above the mouth of the pond. After about four hours, when the fish are tightened to be flush with the mouth of the pond, press stones on them to allow the fish to fully absorb the salt.
When you take the fish out of the salt water, wash the fish again. When you wash it, you can use the salt water in the salting pond. After draining the water from the fish, you can directly put it on the fish drying curtain and turn it once every two hours. When the sun is too strong at noon, you can cover the fish with the curtain. When the sun is weak in the afternoon, you can open the curtain and continue to dry it. Generally, it can be completely dried in three days.
Some fishermen don't use fish curtains to dry, but use fish racks to dry. When drying on the fish racks, the head of the fish should be down and the tail of the fish should be up, so that the dirty things inside can be well controlled and the fish can be cleaner. When the weather is good, it will become dried fish after two or three days of drying, and the humidity will be so dry that it can't be squeezed out by hands.
The dry and cool weather in autumn is the best season for drying dried fish. Of course, the other three seasons can also be used. As long as it is sunny, dried fish can be dried, and the dried fish should be put away in time, otherwise it will become too hard and lose a lot of nutrition.
Sun-dried dried dried fish should be stored in a ventilated and dry place. Pay attention to moisture protection in summer. If it is stored for a long time, it should be sealed. In summer, it can also be sealed and then stored in the refrigerator.
