The first step is to unfreeze the frozen pig's trotters, clean the hair in the skin after washing with clear water, and clean the hair in the skin before cooking, otherwise the pig's trotters will smell hairy after eating. After cleaning, soak them in clear water for about half an hour, change the water halfway 1~2 times, and completely remove the blood from the pig's trotters according to the soaking.
Step 2: Put the trotters in a pot, blanch them with proper amount of water until the surface fades, and then continue to cook for 2 minutes to fish them out. Adding rice wine during blanching is beneficial to remove fishy smell. In the spare time of blanching the trotters, prepare marinade packages: dried red pepper, pepper, fragrant leaves, star anise, old rock sugar, ginger slices, soy sauce, pure grain wine and other trotters.
Step 3: Put the washed and drained trotters into the pressure cooker, prepare the marinade package, pour it into the pressure cooker at one time, add a proper amount of clean water, and cover the pressure cooker lid after the amount of water is wiped over the trotters 1cm, and put it on the gas cooker to shoot, then simmer on low heat 15~ 18min, and then simmer until the standard air pressure in the pressure cooker valve is fully discharged and opened.
Tips When buying pig's trotters, first burn them black with a spray gun. If you don't have a spray gun, just take a gas stove. After burning the pig's trotters black, soak them in cold water for 30 minutes, then scrape off the black mucosa with a knife and clean them before cooking. In this way, the smell in the pork skin will be exhausted.
