Shandong coast of Yellow Sea and Bohai Sea is the main producing area of Penaeus monodon in China. Its products are characterized by large and neat grains, smooth body surface, golden color and hook-like shape, and are known as "golden hook" dried shrimps.
When selecting dried seaweed, we can only pay attention to it from the general external senses, and we can refer to the following aspects:
(1) color: the top grade is bright, translucent, yellow or light red, and whether salt is added or not has nothing to do with sunny or cloudy days. Because for factories, adding salt can replace preservatives. Dried dried dried sea rice on sunny days is mostly bright and has no peculiar smell. On rainy days, most of the dried seaweed will be sent to the cold storage for preservation, even if it is only one day, it will affect the freshness.
(2) Body shape: The shape of the shrimp is curved, which means that the shrimp is relatively fresh during processing (the death of live shrimp has a process of gradual death and contraction).
(3) Impurities: No matter manual or machine selection, it can't be completely impurity-free (except for certain species of shrimp, such as claw shrimp).
(4) Taste: Take a shrimp and chew it in your mouth. The one that feels fresh and slightly sweet is the top grade.
(5) Dry humidity: The dryness of most dried seaweed in the market is about 90%, but the top grade is 95%. But 90% is ok.
