How to cook eggplant (super simple and delicious)
Cut the eggplant into hob pieces and coat with dry starch. Slice garlic and set aside.
Put salt, sugar, vinegar, soy sauce, starch, and water in a small bowl, stir to make a juice and set aside.
Put oil in the pot and fry the eggplant.
Pour out the excess oil in the pot, leaving as much oil as you usually use for cooking. Add garlic slices and stir-fry, then add the fried eggplant, stir-fry a few times, and add the prepared juice. Pour in, and after thickening is completed, serve on a plate.
