Liangpi is a popular delicacy across the country that many people like, especially in the hot summer, a bowl of it is sour, spicy and smooth, and it is extremely enjoyable! The most famous one is Shaanxi Liangpi, but in fact, the Liangpi from the five northwest provinces have their own characteristics and are all delicious. The technique of making cold skin is actually not difficult, and most people can succeed after one or two attempts. But whether the cold skin is delicious or not, the key lies in the seasoning water. Below, I will share with you how to make seasoning water. ?
Liangpi seasoning water is generally divided into aniseed water, vinegar water, garlic water, MSG water, chili oil, and sesame sauce. I will introduce them one by one below:
1. Production of feed water.
Prepare some aniseed, grass fruits, pepper, bay leaves, cinnamon, nutmeg, ginger slices, and fennel. It doesn’t need to be precise to the exact number of grams, just use whatever you want. Pour all ingredients into a stainless steel pot. Don't use an iron pot to boil the seasoning water, as it can easily turn the seasoning water black. After the water boils, turn to low heat and simmer for about 10 minutes. Filter the seasoning with gauze and the remaining water is the seasoning water, and let it cool for later use?
2. Preparation of chili oil
Prepare half a bowl of very fine dried chili powder (minimum It is best to use chili powder produced in the northwest), add salt, cooked white sesame seeds, and special seasoning powder for cold skin in order (sold online, if you don’t add five-spice powder, it will work), stir well with chopsticks, and pour more vegetables into the wok. Heat the seed oil, let it cool slightly, then pour it into the chili bowl in batches, stirring with chopsticks while pouring the oil. Note that the oil must cool down slightly before sprinkling the chili pepper.
Then add a little balsamic vinegar to bring out the aroma of the chili oil. Remember, this step is very critical?
3. Making garlic water: Peel a head of garlic and pound it into minced garlic, add salt, add cold boiled water and mix well. If the garlic paste is poured with hot oil, it will taste more fragrant. ?
4. Preparation of sesame sauce
Prepare an appropriate amount of sesame sauce in a bowl, add a spoonful of salt and boiling water, and use chopsticks to slowly spread the sesame sauce. Remember, you must use boiling water to make sesame paste. The sesame paste will taste more fragrant. Add a little sesame oil to the prepared sesame sauce and stir evenly with chopsticks. To make MSG water; add salt and MSG in a bowl, add cold boiled water and stir well. ?
6. How to make vinegar water? Pour the balsamic vinegar into the stainless steel pot?
After the vinegar is boiled, pour it into a bowl and let it cool. Vinegar is heated to remove the bitterness and make it more fragrant and soft. Don't use an iron pot for heating. Vinegar can easily react chemically with the iron pot and change the taste. Add shredded cucumber or carrot, chopped peanuts, and coriander, and the seasoning for cold skin is basically ready.
