1. Steamed Wuchang fish
Ingredients: 1 Wuchang fish, the right amount of ginger, the right amount of green onions.
Practice: Wuchang fish gutted, cleaned. Cut tic-tac-toe slits on both sides, and code salt and cooking wine on both sides of the fish to taste. Put green onions and ginger on the plate. Put the fish on the shredded green onion and ginger, and code the shredded green onion and ginger and minced garlic on top. Then, yard 2 chili peppers of shredded chili peppers. 2. Steamed Guihua Fish
Ingredients: 1 Guihua Fish, oil, salt, wine, pepper, green onion, ginger, soy sauce, carrots, green onion leaves.
Practice: Remove the gills, scales, and belly of the guppy fish, and wash it. Make a few cuts on each side of the fish, sprinkle some ginger, pepper and salt, and rub all over the fish to taste for 30 minutes. Drain the fish from the marinade and place it on a large plate. Put some green onions and ginger slices on the belly of the fish. Sprinkle some green onions and ginger and add the wine. Bring a pot of water to a boil, add the fish to the pan and steam over high heat for 12 minutes. Let steam for 2 minutes, then pour off the juices from the pan. Remove the ginger and green onion from the fish. Add some steamed fish soy sauce. Top with shredded scallions, green onion leaves and shredded carrots. Heat the oil and pour it over the fish.
3. Thai Lemon Steamed Fish
Ingredients: 500g preserved fish, moderate oil, moderate salt, 50g lemon, 5g white pepper, 5g cooking wine, 5g fish sauce, 5g soy sauce, 5g sugar, 5g minced garlic, 5g minced green onion, 10g Thai sweet chili sauce.
How to do it: Clean the preserved fish, rub it with white pepper powder, cooking wine and fish sauce, and marinate it for 5 minutes. A few cuts on the fish can effectively reduce the steaming time and make the steamed fish more tender. Wash the lemon and cut into even thin slices. Decorate the lemon slices to the side of the plate for steaming the fish, place the marinated preserved fish into the lemon and arrange a few more lemon slices on the fish. Mix salt, soy sauce, sugar, minced garlic, scallions, and Thai sweet chili sauce into a bowl of sauce for the steamed fish. Drizzle 1/2 of the prepared sauce over the lemon fish, transfer to a steamer or steamer pan, and steam for 5 minutes. Once the fish is steamed, drizzle with the remaining 1/2 of the sauce and finish with a drizzle of hot oil.
