1. Wash and peel the potatoes, cut them into pieces and soak them in water to prevent oxidation and discoloration; wash, peel and cut the carrots into pieces, wash and chop the pork bones and blanch them ; 2. Put water and ginger in the pot and bring to a boil. Add pork bones and simmer over high heat for 15 minutes. Add carrots and potatoes and boil, then reduce to medium to low heat and simmer for 30 minutes. Add salt to taste.
