How to make good fries

4. About 4 minutes later, when you see the fries shrinking in size and slightly charred, make sure they're cooked through, then lift them out of the pan to control the oil. Turn off the heat and remove the pan from the heat to cool for a while.

5. After 1-2 minutes, heat the oil again and pour in the fries for a second time. This time the fries will soon harden one by one, you can use chopsticks to turn.
