Traditional air-dried mutton is mainly shade-dried, not sun-dried. The production cycle is very long and takes several months.
The following is a quick way to make air-dried mutton:
Materials required: mutton, onion, ginger, garlic, cinnamon, cooking wine, soy sauce, salt, five-spice powder, black pepper Pepper; spice bowl, oven, chopsticks.
1. Cut the mutton pieces into strips as thick as your fingers, not too small, as they will shrink after drying.
