Do you need to blanch mushrooms?
Blanching mushrooms before cooking is optional but not necessary. The main purpose of blanching is to remove oxalic acid, pesticide residues and surface dirt, and it also helps to shorten the cooking time and maintain the flavor of the mushrooms. It is also known as Pocket Mushroom, Ring Stalked Side Ear, Yellow and White Side Ear, Ring Stalked Bucket Mushroom, Shimeji Mushroom, and Small Flat Mushroom. It is different from the common Anchovy Mushroom because of its small size, with a stipe of 5 to 6 centimeters, and a cap diameter of less than 3 centimeters. It is rich in nutrients, and the polysaccharides it contains have been proven to have anti-tumor functions. Its seed body is rich in high-quality mycoprotein and 17 kinds of amino acids and a variety of microelements needed by the human body, so it is a kind of rare edible fungus with high nutritional value, and has the reputation of "the best of mushrooms".
