It is said that this year a dark horse suddenly appeared in the field of zongzi, which is yogurt zongzi. Yogurt zongzi not only stole the limelight of the dispute over sweet and salty zongzi, but also made a hot search in Weibo, and even had a big V endorsement.
In addition, there are various sayings about zongzi on the Internet. Some statements are very reasonable, such as don't eat too much zongzi at a time, don't eat it too cold ... while others are debatable.
Next, let's take stock of "the right and wrong of zongzi".
Is zongzi high in calories?
It depends on what kind.
Zongzi has two ingredients: glutinous rice, stuffing sugar, jujube, pork and egg yolk. The heat of glutinous rice is not high. According to the statistics of the United States Department of Agriculture, the calorie of 100g cooked glutinous rice is 97kcal, which is similar to that of sweet potato, so it can be called low-calorie food.
The key to the heat of zongzi lies in the stuffing. Different dumplings have different fillings, so it is difficult to make accurate statistics. Generally speaking, salty zongzi has higher calories than sweet zongzi. 100g The heat of sweet zongzi is about 150kcal, which is similar to that of rice cakes. 100g salty zongzi has a heat of more than 200kcal, which is similar to steamed bread.

Therefore, if you are going to make zongzi yourself, you can reduce the stuffing appropriately and make more sweet zongzi. If you plan to go to the supermarket to buy finished zongzi, you may wish to pay attention to the formula table.
Zongzi is difficult to digest?
The cooking and eating methods of zongzi may affect digestion.
A zongzi needs the cooperation of several organs from eating in the mouth to being absorbed into the blood.
The first is the mouth. Amylase in oral cavity can digest starch preliminarily. However, because food stays in the mouth for a short time, the main function of the mouth is to chew food. Then there is the esophagus, which is the passage of food and has no digestive ability. Then the stomach, the first stop of normal digestion. Finally, the small intestine, the main place for absorption.

In this process, the stomach plays the most important role. It is necessary to fully grind the food, push the ground food into the small intestine in an orderly manner, and adjust the appetite (the stomach wall is pulled to indicate that the stomach is almost full, so be sure to remind the brain to eat less). On the other hand, the stomach is easily affected by food. If the food is too big or sticky, it will take longer to grind. Fat in food can not only reduce the secretion of gastric juice, but also inhibit the movement of the stomach and reduce the digestive efficiency of the stomach.
If you eat sweet zongzi that has just come out of the cage, chew it slowly and it will not burden your stomach. But if you eat cold rice dumplings or they contain a lot of fat, they are not so friendly to the digestive system.
In addition, the expansion coefficient of glutinous rice is small. That is to say, compared with rice and steamed bread with the same quality, rice and steamed bread are smaller in size and have weaker pulling force on the stomach wall, which will lead to you eating too many zongzi and not having enough.
Drinking strong tea can relieve the greasiness of zongzi?
Some people may feel upset stomach, bloating, burping, nausea and so on. After eating zongzi, severe cases may even have transient gastroesophageal reflux, which is manifested as heartburn and acid reflux. These symptoms may be caused by overeating, especially excessive fat intake.
Strong tea can dilute gastric juice and relieve stomach discomfort. But in the long run, strong tea will stimulate the vagus nerve, increase the secretion of gastric juice, thus interfering with the digestive function of the stomach. Studies have shown that high-fat diet and drinking strong tea will increase the risk of gastroesophageal reflux disease.
Can yogurt promote the digestion of zongzi?
Whether the digestive system can work normally depends on two things: one is whether the gastrointestinal peristalsis is normal, and the other is how the gastrointestinal absorption capacity is affected by the state of the gastrointestinal tract itself and the intestinal flora.
Most ordinary people have normal gastrointestinal function, so whether yogurt can promote digestion depends on whether it can promote gastrointestinal peristalsis and whether it is beneficial to intestinal flora.
Regarding the former, the answer is no, dietary fiber is the biggest contributor to gastrointestinal peristalsis, and the dietary fiber content of yogurt is not high.
As for the latter, it is controversial. Traditionally, yogurt is good for intestinal flora. On the one hand, yogurt contains some probiotics, and major manufacturers also like to use "how many kinds of probiotics are contained" to promote it. On the other hand, the nutrition provided by yogurt may contribute to the intestinal flora.
However, recent studies show that things are not that simple. Probiotics contained in yogurt are not worth mentioning in front of the vast intestinal flora. These probiotics may not be able to "settle down" in the intestine smoothly, and naturally they will not affect the digestive system.
As for nutrients, yogurt is available, and so are other foods. Furthermore, the study of intestinal flora has just emerged, and most of the existing experimental data are based on animal experiments. I'm afraid it will take some time for the influence of yogurt on human flora to be conclusive.
Therefore, drinking yogurt is not mainly to regulate the stomach, but because it is "close to the people": it tastes sweet and sour and has low lactose content. Especially lactose intolerant patients, drinking milk will cause diarrhea, and drinking yogurt will be much better.
In short, eating zongzi requires some skills. Try to eat it while it is hot, chew it slowly, and match it with some light foods such as vegetables and fruits. In addition, the temperature is high in summer, and the bacteria on zongzi multiply quickly. It's best to refrigerate the endless zongzi as soon as possible.
