Steps of dry steaming salted fish
1
Soak the dried salted fish in cold water for 20 minutes, changing 1 time to remove some salt.
2
Wash the soaked salted fish and cut it into pieces of appropriate size.
three
Prepare the ingredients. I used onion, ginger, garlic, coriander, dried red pepper and bright red pepper. In addition to these common ingredients, I also used orange peel, which is especially recommended. Putting orange peel can not only help remove the fishy smell of salted fish, but also have a very special aroma.
four
Take the oil pan, heat the oil, add onion, ginger and pepper and saute until fragrant.
five
Then stir-fry the cut salted fish in a pot.
six
Then put a tablespoon of yellow rice wine (cooking wine can be used instead here, but the mellow taste of yellow rice wine will be better with the heavy taste of salted fish)
seven
Add a teaspoon of sugar.
eight
Add a little chicken essence at the same time.
nine
Finally, add a spoonful of braised juice, a mixture of soy sauce and vinegar, with the ratio of braised juice to soy sauce1:1,and just a few drops of vinegar.
10
Finally, put the fried salted fish on a plate, put the orange peel on it, and steam it in the pan for 10 minute.
Tips
1, salted fish must be soaked in clear water to remove part of its salt, but it should not be soaked for too long, depending on the size and salting degree of your fish.
2. Frying the fish before steaming can remove the fishy smell of the fish and make the fish more fragrant.
3, if you like, you can try to put one or two pieces of orange peel, which will have a very special taste.
4. It's better to add yellow rice wine. The reason is that the taste will be icing on the cake, and cooking wine is not used instead.
5, add a teaspoon of sugar, which can neutralize the saltiness of fish and refresh it at the same time.
