Steps to make fried prawns with celery
1
Pick, wash and cut celery into small sections.
2
Remove the shrimp lines from the large green prawns, wash them, add 1 spoon of cooking wine, a little salt, chopped green onion, ginger and garlic, mix well, and marinate for more than ten minutes.
3
Soak the fungus in warm water, wash it, tear it into small pieces and set aside.
4
Heat the pan with oil, pour in the marinated prawns, and stir-fry quickly.
5
Pour in oyster sauce (about 2 tablespoons) and season.
6
Pour in light soy sauce (1 tablespoon) and season.
7
Pour in half a bowl of hot water, bring to a boil over high heat, turn to medium to low heat for ten minutes, pour the juice and shrimp into the bowl, and set aside.
8
In another pan, heat 70% of the oil, add celery segments and stir-fry evenly.
9
Pour in the pre-fried shrimp juice and let the celery fully absorb the flavor of the shrimp juice.
10
Add in the fried prawns and stir-fry evenly.
11
Add fungus and stir well.
12
Add appropriate amount of salt to taste, turn on high heat for two to three minutes, and then serve.
