How to cook griddle fish
The practice of dry pot fish:

Ingredients: snakehead (snakehead) 300g, red pepper 1 piece, green pepper 1 piece, lotus root 1 piece, 2 parsley, 3 slices of ginger, 8 cloves of garlic and 2 shallots.

Seasoning: cooking wine 1 tablespoon, light soy sauce 1/2 tablespoons, 8 grams of salt, black pepper 1/3 teaspoons, sugar 1 teaspoon, and vegetable oil 3 tablespoons.

Self-made spiced powder: 3 grams of star anise, 3 grams of cinnamon bark, 2 grams of fragrant leaves, 3 grams of Amomum tsaoko, 3 grams of clove 1 gram, 3 grams of pepper, and 20 grams of cooked white sesame (all materials can be ground into powder by the dry grinding function of a cooking machine, and can be put in a seasoning bottle for cooking at ordinary times).

1. Prepare materials, seasonings and homemade spiced powder.

2. Soak the snakehead for a while to drain the blood, then slice it into fillets, add cooking wine, salt (about 6g) and a little black pepper to catch it until it becomes sticky, and then marinate it for more than 10 minute (the ratio of fish to salt is as large as100: 2).

3. Peel the lotus root, cut it into thin slices and soak it in water for later use (soaking in water is not easy to oxidize, and it can also soak off excess starch, making the finished product more crisp and refreshing).

4. Cut the green pepper into small pieces

5. Slice ginger, peel and pat garlic, mince shallots, and cut parsley.

6. Pour more oil into the non-stick pan and heat it. Add ginger and garlic and saute until fragrant (there must be more oil in the dry pan).

7. Add lotus root slices and green peppers and stir-fry until they are broken. Add a little salt (about 2g) to taste.

8. Pour in the fish fillets and stir-fry them quickly until they become discolored (you can add some oil to the fish fillets before they are put into the pot, so that they will not stick to the pot, and the fish themselves will not stick together. Don't put them into the pot for a long time, just keep them fresh and tender and completely discolored)

9. Finally, stir in a little soy sauce and white sugar and stir well, then sprinkle with homemade spiced powder, chopped green onion, cooked white sesame seeds and coriander.
