2. Put the snail into the drain basket, add some salt, and scrape it gently (too hard will crush the shell). There will be a lot of bubble mucus, then rinse it with clear water and drain it.

Saute shallots, ginger and garlic in a hot oil pan, pour in washed mud snails, add a spoonful of bean paste, add a little sugar, a little soy sauce (soy sauce should be added according to your taste), sprinkle some green peppers and stir fry for a while. Mud snails are cooked quickly, fried for too long, and taste old and not delicious.
