300g pork belly, 250g bitter melon, 50g dried shrimp, appropriate amount of fine salt.

1. Prepare bitter melon, pork and dried shrimp, wash and set aside.
2. Add an appropriate amount of fine salt to the dried pork and shrimp meat, chop into minced meat, and marinate with salt, pepper, light soy sauce, sugar, cornstarch, and raw oil for a while.
3. Cut the bitter melon into sections and use a spoon to hollow out the pulp.
4. Stir the pork puree evenly and fill it on the bitter melon segments. Press the meat filling as flat and compact as possible to prevent the meat filling from coming out during the cooking process.
5. Heat oil in a pan and put the well-soiled bitter gourd meat stuffing side down into the pan.
6. Add an appropriate amount of water and soak the bitter melon. Bring to a boil over high heat and then simmer over medium to low heat. Cover the steamer and steam for twenty minutes.
7. After steaming, turn off the heat and serve. The meat-stuffed bitter melon is ready.
Tips
You can put a layer of cornstarch into the bitter gourd to make the meat filling better adhere to the bitter gourd.
