The pickling method and ingredients of mustard shreds are as follows:
Ingredients: mustard shreds, salt, dark soy sauce, light soy sauce, rice vinegar, white sugar, and five-spice powder.
1. Wash mustard greens, peel off the skin, cut into shreds, add salt, mix well and marinate for more than 6 hours.
2. After marinating, squeeze out the juice. This will remove a large part of the spicy and astringent taste of mustard greens in the mustard shreds, and most of the salt will be retained in the squeezed juice. Good food is not too salty.
3. Put dark soy sauce, light soy sauce and sugar into a pot and bring to a boil over low heat. This will melt the sugar and bring out the flavor of the soy sauce.
4. Let cool and add rice vinegar. You can add some five-spice powder and some chili powder.
5. Add mustard shreds and mix evenly.
