The difference between Salted Butter and Unsalted Butter is that Salted Butter contains about 1.5% salt, with a corresponding lesser amount of cream, and essentially the same amount of moisture.
Using unsalted butter primarily for cookies makes it easier to control the salt content of baked goods.
