The production of winter dishes in Tianjin began in the Qing Dynasty, flourished in the early years of the people, originated in Cangzhou, and flourished in Jinghai. It is said that in1401-1425 (Yongle period of Ming Dynasty), a boatman surnamed Chang occasionally put Chinese cabbage in a fish basket and pickled it with salt. The pickled Chinese cabbage was crisp, tender and delicious. Inspired by it, he later produced and sold it in large quantities, which sold well and was called "Ji Zhuangzi Winter Cuisine". This is the embryonic form of Tianjin winter vegetables. Later, a pickles master from Cangzhou moved to Jinghai, improved Ji Zhuangzi's winter dishes, and prepared "assorted dishes", which sold more vigorously.

Since then, winter vegetable workshops in villages around Zhuangzi have soared. 1736 ——1795 (during the reign of emperor Qianlong of Qing dynasty), several winter vegetable workshops in Jinghai county, which were dominated by the Chang family along the banks of the canal, learned from the production technology of spiced pickles in Tianjin pickles garden, and further improved the processing technology of winter vegetables, making them taste better and more resistant to storage, and gradually formed a unique variety of pickles. In the late Qianlong period, the winter dishes in the areas of Chenguantun and Ji Zhuangzi have become popular flavor foods and started to be exported, which are called Chenguantun Winter Cuisine or Jinghai Winter Cuisine.

At the beginning of the Republic of China, Chang Fuyuan, a descendant of Chang family in Ji Zhuangzi village, founded "Qingchangde Sauce Shop", which specializes in winter dishes. 1927 (in the 16th year of the Republic of China), the sauce shop was renamed as "Shanquanyong", and an operation organization was set up in Guanjiatangfang Hutong in the northwest corner of Tianjin, which was wholesale and retail, and a warehouse was built in Sanyuan Village to store raw materials and finished products. The winter dishes produced are called "Sagittarius" and are officially registered. In the same year, a village was set up in Hong Kong to export winter vegetables to Southeast Asia, which was very popular. Since then, the reputation of winter vegetables in the areas of Chen Guantun and Ji Zhuangzi has become famous, and some merchants from Tianjin and other places have set up workshops here to produce and manage winter vegetables, and Jinghai winter vegetables have entered the golden age of production and sales.

After the founding of New China, the production of winter vegetables in Jinghai has developed rapidly. Since 1965, Tianjin Food Import and Export Corporation has set up winter vegetable processing plants in this county, with the name of "Tianjin Winter Vegetable" and the export trademark of "Great Wall Brand". The export volume has increased greatly, and the technology has been continuously improved and it is determined to operate.
