1. Put the ribs directly into a pot with cold water, boil them with strong fire, skim off the floating foam on the surface, take out the ribs and drain the water, or dry the surface water with kitchen paper.
2. Peel potatoes, cut them into hob blocks, rinse them twice to remove starch components, and soak them in clear water to prevent oxidation and discoloration.
3. Wash the green pepper, remove the seeds and cut into oblique pieces, cut the ginger into small pieces, cut the onion into chopped green onion, or use chives.
4. Heat a little oil in the pot and fry the ribs in the pot until both sides are brown.
5. Add rock sugar and stir-fry until the rock sugar melts, then add onion, ginger and star anise and stir-fry to give a fragrance.
6. Add soy sauce, soy sauce and cooking wine and stir fry until the ribs are colored.
7. Add enough water, and simmer for 30-40 minutes.
8. When the ribs are cooked to about 80%, add potato pieces and continue to stew for 20 minutes.
9. After the potatoes are soft and cooked, add the right amount of salt, then add the green pepper pieces, and quickly stir fry to collect the juice.
