Cool Kale

Garlic Kale

Wash the kale, and cut the leaves and stems separately. The stems can be cut diagonally, or split for flavor.
Slice the leaves and control the water.
Half of the garlic is thinly sliced and half is crushed (I used a garlic press) into a garlic paste.
When the oil is hot, saute the garlic slices over medium heat.
After the garlic is lightly browned, add the kale stalks and sauté for about a minute. Don't add the stalks and leaves at the same time, as they take different lengths of time to cook.
When the stalks are soft and ripe, add the leaves. Pour in the garlic paste, add salt, and stir-fry over high heat until the leaves soften a bit.
The leaves cook easily, and the temperature of the pan is enough to scald them, so it's not a good idea to stir-fry them for a long time. The second addition of garlic will give the whole dish a garlicky flavor.
