Ingredients ?
1 white or green radish (about 2 pounds)
3 eggs
1 handful of shrimp peel
2 green onions
1 small piece of ginger
3~4 cloves of garlic
1 tsp of ground pepper
2 tsp of five-spice powder
Salt, moderate
1 tsp of dark soy sauce
Sesame oil 1 tsp
Moderate amount of cooking oil
Chicken essence (optional) 1 pinch
How to make radish dumplings ?
Wash green or white radish. This radish weighs about two pounds and looks big, but in fact it doesn't have much water when it's clenched dry.
Polish the radish with a julienne peeler and blanch it in boiling water for about 10 seconds. The purpose is to remove the spicy flavor of the radish, do not blanch the radish soft, it will affect the taste.
Use a caged cloth or gauze to dry the water in the radish.
Place on a chopping board and chop.
Crack the eggs into a bowl and whisk well.
Scramble the eggs in a pan with a good amount of oil.
Place on the chopping board and cut into small pieces.
Cut green onions into scallions, ginger chopped.
Wash and drain the shrimp.
Two small spoons of five-spice powder and a small spoon of pepper powder on top of the radish.
Add chopped green onion and ginger.
Pour a tablespoon of cooking oil into a wok and heat it.
Splash the hot oil on the top layer of the filling.
Add the shrimp peel and egg.
Add a spoonful of fresh soy sauce, a small spoonful of sesame oil, a pinch of chicken essence and a pinch of salt and mix well.
This is the dumpling mixture, smells good?
Roll out the dough and wrap the dumplings. (You can also buy commercially available dumpling skins)
Boil the water and cook the dumplings.
Take a bite, it's delicious.
It is also quite delicious when you let it cool and fry it.
Tips
Because the shrimp skin itself is salty, don't add too much salt to the filling.
