2. Ingredients: old pumpkin, glutinous rice flour, wheat starch, white sugar, bread crumbs and cooking oil.
3. Practice: Use yellow old pumpkin to make pumpkin pie. This pumpkin has high sugar content and tastes soft and sweet. Peel the pumpkin, cut it into thin slices and put it on a plate. Pour a proper amount of water into the steamer to boil, add pumpkin and steam for 1 minutes, then take it out.
4. Add a proper amount of sugar while it is hot, and press it into pumpkin puree with a spoon, making sure it is delicate, so that the pumpkin pie tastes good.
5. Add glutinous rice flour, because pumpkin has more water, so the ratio of glutinous rice flour to pumpkin is almost 1:1, even more than pumpkin. Then add some wheat starch, the amount of which is 1/1 of glutinous rice flour. First, stir it with chopsticks to make dough, then start to make smooth dough, and cover it for half an hour, so the dough becomes particularly soft.
6. Grab a piece of dough of any size by hand, first put it in the palm of your hand and knead it into a ball, then press it into a small cake, put it in bread crumbs, and evenly wrap the surface with a layer of bread crumbs.
7. Pour a little more oil into the pot. When the oil temperature is 4%, put the prepared pumpkin pie in and fry it for 1 minute on low heat. When the pumpkin pie is set, turn over and continue frying for 1 minute. After both sides turn golden, take out and drain the oil, and the pumpkin pie will be fried.
