Stewed chicken with dried mushrooms
Wash dried mushrooms and soak them. Pour water from the pot, add the chicken, stew for about 5 minutes, remove the floating foam, and remove the chicken for later use. Add water to the pot, add chicken, red dates, scallions, ginger slices, star anise, Chinese prickly ash, dried chilli slices and cooking wine, stew for 20 minutes, then add the soaked mushrooms, continue to stew for 30 minutes, and add salt before taking out of the pot.
