Crystal Cake is a specialty of Weinan City, Shaanxi Province.
Crystal Cake originated in Xiangui County, Shaanxi (pronounced Ji, now Xiangui Town, Linwei District, Weinan City, Shaanxi), is a famous pastry in Guanzhong, Shaanxi, and legend has it that it was named by Kou Zhun, a famous prime minister of the Northern Song Dynasty. The ingredients of the crystal cake are flour, sugar (high quality with sugar), rock sugar, oil, green and red silk, etc. The cake is baked with a golden color. After baking, the surface color is golden, surrounded by snow white, and the entrance is crispy. Sugar filling by the marinade, the mouth cool and fragrant. The so-called "golden face, silver gang, skin flying crispy, cool tongue seepage teeth, fragrant and refreshing".
Crystal cake sold in Shaanxi Weinan, later spread to Xi'an, Lime Kiln, De Mao Gong and other brands are more famous. Crystal cake production steps are as follows:
Materials prepared: wheat starch 162g, glutinous rice flour 60g, 60g of granulated sugar, 222g of water, the right amount of bean paste filling, the right amount of cooking oil, 1 spoon of milk powder.
1: Sift the sugar, wheat starch, and glutinous rice flour into a large container, and mix well with chopsticks.
2. Then add 1 tablespoon of milk powder and a tablespoon of cooking oil and stir slightly.
3. Boil 222 grams of water in an electric kettle, then slowly add it to the powder.
4. Stir with chopsticks to form a floc.
5. Then knead the dough with your hands.
6: Take a small handful, knead it and flatten it.
7: Put in the bean paste filling.
8: Once wrapped, flatten it slightly and spread a layer of salad oil on the surface.
9: With the oil side facing inward, place it into the mooncake mold.
10: Press out the cake mold on blotting paper.
11: Finally, when the water in the steamer boils, put in the biscuits and steam them for 15 minutes on high heat, then take off the heat and smother them for 5 minutes.
