Ingredients ?
500g of salmon trimmings
150g of enoki mushrooms (it's ok if you don't put them in)
50g of pickled peppers
2 green onions
10 cloves of garlic
20 peppercorns
10 chili peppers
17g of salt
How to make boiled salmon ?
Wash the salmon, add 10g of salt and white pepper to marinate and set aside.
Boil water,
Pot of boiling water up the cleaned enoki mushrooms scalded and cooked for two minutes, fished out into the bottom of a large bowl.
(It's okay to leave out the enoki mushrooms.)
Next, cook the salmon in a pot, and when the water doesn't boil, but is almost boiling (about 70 degrees), add the fish fillets.
When the water comes to a boil, continue to cook for a minute and chuck out the fish on top of the enoki mushrooms.
In a pot of boiling water, add the chopped pickled peppers and bring to a boil.
Pour slowly into the large bowl with the salmon. Add 7 grams of salt.
Sprinkle minced scallions and garlic over the salmon that is exposed to the water.
Add a little oil to the frying pan, turn off the heat when the oil is 80% hot, add the dried chili peppers and peppercorns. After the aroma, fish them out and don't, just the oil.
