How to make abalone chicken soup?
Soak abalone in cold water for 48 hours, changing water constantly during the process, and washing after soaking.
Cover with boiling water and stew for one night, then take a casserole and add abalone, old hen and pigskin (blanch first).
Add scallops, ginger slices and shallots, add enough water, simmer for five hours, and then turn off the heat. Put enough water at a time, don't add water in the middle, otherwise the abalone juice is not strong and there is no need to add salt. Scallops themselves are salty.
After turning off the fire, remove the residue except abalone, add chopped green onion, and enjoy the clean abalone chicken soup after seasoning. Put abalone in a casserole overnight.
The next day, add oyster sauce and cook for another two hours. Turn off the fire and stew for a day.
On the third day, after boiling for more than ten minutes, turn off the heat and thicken the abalone with raw powder.
