Pin Soul Egg Scrambled Rice
1. Wash 100g of broccoli into the pot of boiling water, blanch and then fish out, remove the stems and cut into small particles, standby.
2. Separate the whites and yolks of 2 eggs and set aside, and slice 1 sausage.
3. Pour a portion of loose rice into a bowl and add the egg yolks, mix the rice and egg yolks well and set aside.
4. Add 1/4 tsp salt to the egg whites and beat lightly. Pour a little oil into the pan and cook over low heat until the oil is slightly hot, then pour in the egg whites. Rotate the pan so that the egg whites are evenly spread into an omelet, and set aside on a plate.
5. Heat a little oil in a pan, sauté the sausage slices, then pour in the rice mixed with the egg yolks and stir-fry until the yolks are cooked and the rice is clear.
6. Finally, add the chopped broccoli, 2 tablespoons of hot sauce and 1 tablespoon of salt and stir-fry well.
