Steps:
1、Take the butter, soften it at room temperature, put it in a large bowl and beat it with a whisk for about 10 minutes, when the color becomes
light and the volume becomes bigger, add the sugar, salt and other ingredients in small portions, and continue to beat until the sugar is dissolved.
2. Add the egg and coconut flour in batches and mix well with a whisk.
3. Slowly add the self-raising flour, taking care to gently knead and mix with your hands when adding.
4. Add the milk and knead the flour until it doesn't stick to your hands. However, the flour should never be stirred in circles, otherwise
it will easily become sinewy and the cookies will be hard.
5. Knead the flour until it doesn't stick to your hands, then cover with plastic wrap and place in the refrigerator for one hour to allow it to fully ferment.
6: Take it out and press out your desired cookie shape with a mold.
7. Grease a plate, place the molded cookies on it, and set the microwave oven to medium heat for 3 minutes and then low heat for 1 minute. If your microwave oven has a grill function, the result will be better.
--Butter Cookies
Ingredients: 200g low gluten flour, 130g butter, 35g granulated sugar, 65g powdered sugar, 50g egg, 1/4 tsp vanilla extract (1.25ML, no need).
Baking: middle of the oven, 190 degrees, about 10 minutes.
Process:
1. Cut butter into small pieces and soften at room temperature (see here for tips on how to soften butter quickly)
2. Beat with a whisk until smooth.
3, add granulated sugar and powdered sugar, continue to beat until the butter is smooth and slightly enlarged in volume.
4. Add the beaten egg mixture in three batches, beating each time until the egg and butter are fully incorporated before adding the next.
5. When the whisking is complete, the butter should appear fluffy in volume and whitish in color.
6. Add vanilla extract and beat well.
7. Sift in the low-gluten flour
8. Using a rubber spatula or a flat spoon, stir in the flour and butter until all the flour is moistened. Do not overmix. The state of the batter after mixing is as shown in the picture. Put the batter into a piping bag and use your favorite spatula to make a pattern on the baking sheet, then bake in the preheated oven. Bake in the middle of the oven at 190 degrees for about 10 minutes.
TIPS:
1. When adding the eggs to the butter, be sure to add them in small batches and whisk each time until the eggs and butter are safely incorporated before adding the next. Be sure not to rush the process to avoid separating the eggs from the butter.
2. You don't need to overbeat the butter. The entire beating process can be controlled in about 5 minutes (depending on the circumstances).
3, with 30 grams of cocoa powder instead of an equal amount of flour, you can make chocolate-flavored butter cookies (not recommended for beginners, because cocoa cookies are dark in color and it is difficult to tell if they are cooked).
4, cookie baking time is short, easy to bake, the last few minutes must be watched from the side, baked to their favorite degree of coloring can be taken out.
