The practice of sweet foam
1. Preparation: Peanuts and soybeans are soaked overnight in advance; Soak the vermicelli (preferably vermicelli, sweet potato powder, which tastes better than vermicelli), cut the tofu into thick slices of about 1cm, fry it in oil pan until golden brown, and then cut it into strips; Wash the spinach and blanch it in hot water; Melt the millet flour with cold water (be sure to use cold water, not easy to agglomerate) and mix well; Chop onion and ginger (ginger must be more to taste)
2. Heat the oil in the pot, add onion and ginger until fragrant, add water to boil, add peanuts and soybeans, cook for 8 minutes, add vermicelli, and add tofu strips after 8 minutes.
3. After boiling the pot again, pour the melted millet flour into the pot and stir well. After boiling, add spinach, turn off the fire, and add spiced powder, white pepper and salt to taste according to your own taste (add more spiced powder and pepper, and spicy food will taste good! )
Dish features
Sweet foam, a kind of traditional mass porridge soup in Jinan, is a kind of salty porridge, which is mainly made of millet flour and boiled with vegetables and beans. Jinan people also commonly call it "spiced sweet foam".
Why is it called Sweet Foam when it is clearly salty porridge?
One of the origins of Baidu
In the late Ming and early Qing dynasties, due to natural disasters and wars, a large number of refugees flocked to Jinan. There was a small porridge shop named Tian, which often gave up porridge for relief. The victims told each other that more people came to the porridge shop to drink porridge to save lives. The porridge shop is difficult to satisfy the public, so a large number of vegetable leaves and salty and spicy seasonings are added to the porridge. Whenever the victims put porridge in the bowl, they saw the foam in the big pot of porridge, and they affectionately called it "Tian Mo", which is the porridge that boss Tian gave to the house. Sometimes a scholar in distress who came from other places to study for the exam also came here to get this porridge, and the food was so sweet that he thought that the "sweet foam" was true. Later, when the scholar became an official after earning fame, he made a special trip to the economy to drink sweet foam again. When asked why, the boss replied that it was actually "Tian Mo", the meaning of Tian's porridge. The official suddenly realized that the mistake of handwriting was caused by only listening to the sound, so he wrote the "Sweet Foam" plaque and recited a poem: "The field foam was made into sweet foam by mistake, only because it was connected with the calendar at the beginning; After reading the vicissitudes of life, it is always sweet after bitterness. " From then on, this salty porridge is called "sweet foam".
