1. Cut off the nails of the chicken feet, cut them into two sections and wash them.
2. Put the chicken feet into the pot, add cold water just enough to cover the chicken feet, add cinnamon, star anise, ginger, green onion, and cooking wine. Bring the water to a boil over high heat, then turn to low heat to keep the water boiling.
3. After the chicken feet are cooked, put them into ice water and wash away the scum.
4. Add chopped millet pepper, pickled pepper and pickled pepper water, onion, garlic, light soy sauce, sugar, balsamic vinegar, lemon, and oyster sauce to the bowl and mix well.
5. Pour the sauce onto the drained chicken feet, stir evenly, and stir every hour.
