Shred onion, ginger and garlic and fry until cooked. Add a little starch, cooking wine and soy sauce to minced meat. Mixed sauce: soy sauce, salt, sugar, vinegar, corn starch (according to personal taste). Garlic powder: break it with the back of a knife. The chopped garlic is not fragrant enough.

Fried eggplant. Heat the pan and add cold oil and hot oil. Put in the eggplant wrapped in flour (if the oil temperature is enough, I'm not sure, I'll throw a piece in first, subject to the eggplant bubbling immediately after it is put in oil), and take out the eggplant.

Stir-fry, leave a little oil in the pot, add the prepared onion, ginger and garlic until fragrant, add the minced meat, stir-fry until the meat turns white, add green peppers and tomatoes, add salt and soy sauce. Stir-fry the fire, don't turn it over, it will look better.

When the tomatoes and green peppers are cooked, add the fried eggplant and stir fry (I put the fried eggplant on paper so that some oil can be controlled and it will be less greasy after frying), add the juice prepared before, continue to stir fry evenly, turn off the fire, add the minced garlic and take out the pan.
