Potato Baba, an old variety of Marco potato, is made by hand after peeling, cleaning, chopping, pulping, filtering and fermentation.
Step 1: Scrape the skin
The first step takes the most time, because the potato Baba is delicious only when the skin of the potato is scraped clean. For many rural children, scraping potato is a must-do activity every day, and it may also be a childhood memory of many people. For Xiaobian, the memory of scraping potato as a child is still fresh in my memory!
Step 2: Wash.
There will still be some dirt sticking to the potato just scraped, which needs to be washed with clean water, so that there will be no impurity pollution in the subsequent production process.
Step 3: grinding pulp.
When I was a child, the grinding was slowly pushed out by a stone mill. In my memory, there was always a situation in which my father pushed the mill and my mother fed it. Nowadays, more grinders are used to grind pulp, which saves manpower more quickly, but it lacks the taste of childhood. Maybe I miss my childhood! Before pulping, you can chop up the larger potatoes, which will speed up the pulping and avoid the phenomenon of machine jamming.
Step 4: Filter.
The ground potato pulp is filtered with a bag (that is, a juice bag made of gauze) to remove water, potato residue and water are separated, and then the filtered water is placed in a basin for 1 hour, and the white material deposited at the bottom of the basin is the essence of potato-potato powder. And potato residue is the raw material we use to make potato Baba. This step is the same as the step of filtering potato powder. Don't waste the filtered potato powder, you can eat it after drying it, or you can directly fry it.
Step 5: stir
Mix the filtered potato pulp and a little flour with baking powder, and leave it overnight for natural fermentation. The reason why potato powder is not added here is that if potato powder is added, the steamed potato Baba may have a "white heart", that is, potato powder will be mixed in the middle of potato Baba and affect the taste. Adding flour for fermentation is to make potato Baba more fluffy. Remember to add sugar when stirring, so that the potato Baba will be sweet and more delicious.
Step 6: Make potato Baba.
You can add your favorite stuffing to potato Baba according to your personal preference, or you can make potato Baba directly without stuffing. Personally, I prefer to eat potato Baba without stuffing.
Step 7: Steaming Baba
Put the cooked potato Baba in a steamer and you can eat it. If the steamed potato Baba is not finished, we can put it on the firewood for the next meal, and of course, we can also use the oven to scorch the skin, so that the baked potato Baba will give off the fragrance of potato!
