Ingredients: 3 pounds of yellow beef.
Seasoning: 30ml of cooking wine, 250g of rapeseed oil, 30g of old ginger slices, 30g of northeastern scallions, 10g of onions, salt, chili powder, cooked pepper powder, appropriate amount of chicken essence, and 10g of sesame seeds.
Recipe: 2 grams of fragrant sand, 10 grams of grass fruit, 3 grams of star anise, 2 grams of bay leaves, 2 grams of cinnamon, 2 grams of white cardamom, 2 grams of black pepper, and 2 grams of cumin.
Method:
1. First cut the yellow beef into strips of 1 cm wide and 5 cm long (squares are also acceptable), soak them in water for 6 hours, and change them every 3 hours. Water once to remove the fishy smell of beef.
2. Soak the above spices in cold water for half an hour to completely remove the impurities in the spices. Do not use the soaked water.
3. Add 5 pounds of water to the bottom of the pot, then add the soaked spices, then add the beef strips and all the ginger slices, green onion segments, cooking wine and an appropriate amount of salt, bring to a boil over high heat, and then change to Cook the beef over low heat, cover with cold water and set aside.
4. Then put in another oil pan, add 250 grams of rapeseed oil, add the cooked beef, and stir-fry continuously.
6. Until the beef is almost dry and smells very fragrant, you can add all the seasonings, stir well, and then put it on the plate.
