Tofu is mainly divided into three categories due to the different coagulants:
One is made with salt brine as the coagulant, which is mostly found in the northern region and is called north tofu, with less water content, which contains 85% to 88%, and it is firmer;
The second one is made with gypsum powder as the coagulant, which is mostly found in the south and is called south tofu, which has a higher water content than north The water content is more than north tofu, up to about 90%, fluffy;
The third is to use glucono-δ-lactone as coagulant, which is a new type of coagulant, known as lactone tofu, which improves the yield rate and product quality, and reduces environmental pollution compared with the traditional preparation method.
