(1) Take a deep bowl and add a proper amount of rice washing water into it. Soaking in rice washing water can remove the astringency of Hericium erinaceus, improve the fragrance of Hericium erinaceus, and make the soaked Hericium erinaceus taste softer.
(2) Put the bowl with rice washing water in a microwave oven, and microwave heat it for 1 min until the water temperature reaches about 30 ~ 40 degrees.
(3) The bone of Hericium erinaceus is immersed in rice-washing water with its pedicle facing downwards, so that Hericium erinaceus can be completely immersed in water, which is beneficial to the growth.
(4) Take a plate and cover it upside down on the bowl, in order to prevent the heat of water from being emitted and keep the constant temperature of water at about 30 ~ 40 degrees.
(5) Put aside and soak for about 2 hours, in order to make Hericium erinaceus fully absorb water, which is beneficial to the growth.
2, steaming method:
(1) Put the drained Hericium erinaceus on the chopping board, and cut the Hericium erinaceus into pieces or shapes you like with a knife.
(2) Put the chopped Hericium erinaceus in a deep bowl, add 1 slice of ginger and 1 small piece of green onion, and add a small amount of salt, 1 spoon of cooking wine.
(3) Pour 1 small bowl of chicken soup into the bowl, preferably without touching the surface of Hericium erinaceus.
(4) Drain water from the pot, set up a steaming rack, put the bowl on the steaming rack, cover the lid, steam for about 30-40 minutes with strong fire, take it out when there is no hard core in Hericium erinaceus, and rinse it with warm rice water for several times. Steamed Hericium erinaceus can be used to cook other dishes.
3. Fried method:
Pick and wash the celery, and then cut it into pieces. Put the right amount of oil in the pot, stir-fry the onion and ginger in the pot, then add the celery and stir-fry a few times. Pour in steamed Hericium erinaceus and celery and stir-fry evenly until the celery is slightly soft. Add salt and pepper, stir-fry evenly, and serve.
