The production process of Jinhua Ham includes the selection of high-quality pig hind legs, which are salted, shaped, leg-turned, washed and sun-dried, and air-dried, with a fermentation period of up to 2-3 years, resulting in fatty meat with a unique flavor. Although Jinhua ham can be eaten raw, this raw food-grade ham requires a very high level of production process, which needs to be made under the most favorable conditions of humidity and temperature for ham curing and maturing, and fully fermented and matured in a natural environment. Therefore, it is not common to find Jinhua ham that can meet the raw food standard.
