First, materials: glutinous rice, millet, red rice, wine cake, crock.
Second, the allocation ratio: 1 kg of rice, 2 kg of water, 5 kg of rice and a wine cake. The others are just decorations, depending on your own preferences.
Third, the production method:
1) The glutinous rice should be soaked for 8- 10 hour. The soaked glutinous rice should be put on a steaming tray and steamed in a pot for 3-4 hours. The steamed glutinous rice should be cooled.
2) First, fry the millet until it is brown, and then put in a certain proportion of water. Then, boil the water with millet and red rice (together). The so-called proportion of water is enough to stir the glutinous rice into a paste. Turn off the fire after the millet is boiled for 15-20 minutes, so that the smell of millet can come out, and then don't let the filter residue cool.
3) Grind the wine cake into powder and stir it evenly with the steamed glutinous rice with a little temperature, and then stir the cooled millet water together, preferably with one hand and a bowl of water with the other hand, so that the wine cake and glutinous rice are more even. The stirred China Good Wine Merchants Network Niang digs a small well in the middle, and there will be some drinks in the well in two days. The purpose of the well is to gather drinks, because every day, some drinks are poured on the surrounding glutinous rice with a small spoon.
4) In two to three days, you will smell a fragrant wine aroma. At this time, you need to cook a lot of millet water, and the method of millet water is the same as before. Let the water cool and slowly drain it from the well. Don't disperse the previous distiller's yeast, or it will turn sour. After 20 days, you can filter the wine.
Note: If you want to sweeten the finished yellow rice wine, you can put some sugar cane in it.
Cover the jar with a clean towel during the whole placing process (it is not necessary to seal the jar in hot weather). If water drops are found around the jar, wipe them off with a clean towel, and the water drops will be sour if they fall into the wine.
